Opening Summer 2026, Gillson’s is a sophisticated, family-owned British-style brasserie located in the heart of Ecclesall Road. Following the success of our sister wine bar, Gills & Co (est. 2022), Gillson’s is our next step in elevating Sheffield’s dining scene. We are dedicated to refined, classical brasserie cooking, an exceptional, curated wine program, and a culture of precise but genuinely warm hospitality.

We are currently building our founding front-of-house team—individuals who view hospitality as a profession, not just a shift.

The Profile We Are Looking For

This is a role for hospitality professionals and dedicated enthusiasts who take pride in their craft.

  • Wine-Literate: You possess a genuine depth of knowledge and a passion for wine. A WSET Level 2 (or equivalent experience) is highly desirable. You are excited to talk about pairings, regions, and producers with a discerning guest base.
  • Composed Floor Presence: You have the organizational strength and maturity to command a busy floor. You maintain a purposeful, urgent, yet entirely calm pace under pressure.
  • Malleable Professionals: You already have a strong foundation of premium service, but you are eager to adapt, refine your skills, and embody the exact service DNA of Gillson’s.
  • Articulate Communicators: You can read a table effortlessly, balancing precise, knowledgeable service with authentic, empathetic guest connection.

What You’ll Be Doing

  • Own the Floor & Service Flow: Take complete ownership of your station during high-tempo services. You will orchestrate the entire guest journey—from the initial warm welcome to the final goodbye—managing table timings, pacing, and clear-downs with absolute precision.
  • Execute Impeccable Steps-of-Service: Deliver a seamless, polished dining experience by adhering strictly to Gillson’s service standards. You will ensure that food and drink are served flawlessly, tables are meticulously maintained, and guests never have to look around to catch a server's eye.
  • Read and Engage the Room: Utilise your natural hospitality instincts to read individual tables effortlessly. You will tailor your communication style to each guest, ensuring service feels highly attentive and personal without ever being intrusive.
  • Integrate Product & Wine Expertise: Seamlessly weave your wine and beverage knowledge into the floor service. While your primary focus is smooth service delivery, you will confidently guide guests through the wine list, suggest pairings that complement our classical brasserie dishes, and handle wine service with proper technique.
  • Drive Team & Kitchen Synergy: Maintain tight communication with the kitchen and leadership team. You will actively contribute to pre-shift briefings, track table pacing to prevent bottlenecks in the kitchen, and support your colleagues on the floor during peak rushes.
  • Maintain Meticulous Room Standards: Take pride in the physical environment of the brasserie. You will ensure that your station, glassware, cutlery, and presentation are flawless at all times, upholding the premium aesthetic of the venue.
  • Resolve Floor Issues with Composure: Manage guest feedback, special requests, and occasional complaints with maturity and grace. You will use your problem-solving skills to resolve issues instantly on the floor, ensuring every guest leaves completely satisfied.

Pay: From £12.80 to £13.50+ per hour (Based on experience & qualifications) + Tronc/Tips
