Wiston Estate Winery is a multi award-winning winery set in the heart of the South Downs.
Each year we expand our harvest team to support one of the most exciting and important periods in the winemaking calendar. We are now recruiting a Harvest Lab Technician to join us for the 2026 vintage.
At Wiston Estate Winery we focus on quality, making the best sparkling and still wines for both our own brands and a diverse range of contract winemaking clients. We work with fruit from across England and are passionate about understanding the unique characteristics of every vineyard and every vintage.
The Harvest Lab Technician plays a key role in supporting the winemaking team by providing timely and accurate laboratory analysis throughout harvest. This is an excellent opportunity for someone looking to gain hands-on experience in a busy commercial winery and develop their understanding of juice and wine analysis.

Daily tasks include:
- Juice and wine analysis (Brix, pH, TA, YAN and other routine tests)
- Sample collection and preparation
- Recording and management of laboratory data
- Fermentation monitoring and reporting
- Assisting with juice and wine trials
- Laboratory cleaning, maintenance and stock management
- Supporting the winemaking team with harvest-related tasks as required
Our harvest usually lasts approximately 4–8 weeks, commencing in mid-to-late September. Flexibility in working hours will be required, including weekends.
You must be able to work in the UK. Due to our location, your own transport and accommodation are essential. In your application, please indicate your full-time availability.
