Head Sommelier (Wine Jobs: Wine Retail & Sommelier)

We are looking for an accomplished Head Sommelier to lead the wine programme in a high-end London dining room. You will own the list end to end, from buying and cellar management to service on the floor, delivering a memorable wine experience for a discerning clientele.

What you'll do
  • Own and develop the wine list, balancing classics, fine wines and emerging producers
  • Lead wine service on the floor, guiding guests through pairings across tasting and à la carte menus
  • Manage supplier relationships, buying, allocations and tastings
  • Run cellar operations: stock control, rotation, inventory and condition checks
  • Train and mentor the sommelier and front-of-house team
  • Manage wine GP, pricing and stock investment with the General Manager
  • Build relationships with regulars and high-value guests
  • Uphold service standards consistent with a fine dining environment
What we look for
  • 3+ years as a Sommelier with senior or head-level experience in a Michelin-starred restaurant, 5-star hotel or comparable venue
  • WSET Level 3 minimum; Court of Master Sommeliers Advanced or Diploma preferred
  • Deep knowledge of classic regions plus genuine curiosity for new producers
  • Proven buying, cellar management and stock control experience
  • Polished floor presence, composed under pressure, natural leader
  • Commercially aware, comfortable owning wine GP and margins
  • Right to work in the UK
