Job Description – Overview
New Hall Vineyards, founded in 1969 is one of England’s oldest vineyards covering 120 acres and specialises in a range of fresh, aromatic still white, red and rose wines including small batches of traditional method sparkling wine from a wide selection of grape varieties. Also offering contract winemaking services for several growers in the Essex and Suffolk counties processing over 250 tonnes in total.
The HCH will be supervised by the Senior Winemaking team throughout the duration of their time at New Hall Vineyards. The role will be extremely practical and hands-on, completing a wide range of duties as part of a team or independently while under supervision. The successful candidate will support and become a key member of the winemaking team during a critical, busy period.

Responsibilities – Including but not limited to
· Pre harvest deep cleaning and equipment preparation.
· Berry sampling and analysis.
· Fruit receival (loading/emptying presses, sanitation of processing equipment).
· Pumps and lines set up, cleaning and sanitation.
· Tank cleaning and sanitation.
· Racking & transfers.
· Enrichment and de-acidification operations.
· Inoculations.
· Additions.
· Pump overs/punch downs.
Compliance & Maintenance
Maintaining a safe, clean and tidy working environment – perform key sanitation procedures during winery operations. Complying with all NHWE H&S regulations.
