Defined Wine Ltd is seeking a Head of Winery Operations to join its new team. Defined Wine Ltd has been set up as a contract-only winery, with no vines or brands of its own. 2019 will be our first harvest, so this is a great chance to join a new business as it starts and to grow with it. The Head of Winery Operations will work under the direction of the Consultant Winemaker but will be the individual responsible for executing all day-to-day operations in the winery, leading and managing the winery staff. We are therefore looking for someone who is already an experienced assistant winemaker and is now looking for greater experience and responsibility. Given the broad spectrum of our clients and their very different requirements, this is an exciting opportunity to be involved in making a wide range of still and sparkling wines. Candidates must have: - A winemaking qualification and experience as an Assistant Winemaker - Good organisational and interpersonal skills and the ability to lead a team - Hold a driving licence and a proficiency certificate for forklift operation - Competence in a broad range of winery duties, including pressing; filtration and preparation of wines for tirage or still wine bottling; stacking; loading and unloading of riddling cages and gyropalettes; disgorgement; and the labelling and packaging of finished goods - Computer skills to manage winery records, stock management and all winemaking administration - Flexibility to work extended hours when necessary, for example during the harvest - Eligibility to work in the UK In addition, candidates should ideally have: - Experience of working in a winery with contract clients - Experience of making English and Welsh or cool climate wines
