Bailey Hills is a family-owned and run vineyard & winery, nestled between Hertfordshire and Essex. We planted our vines in 2018, and 2025 is an exciting year—we’re launching our first sparkling wines and opening our brand-new winery and visitor centre!
We’re looking for a passionate and hands-on Winemaker to join our small, close-knit team. If you love wine, enjoy problem-solving, and are ready to take full ownership of crafting exceptional wines, we’d love to hear from you.
What You’ll Be Doing – A sample of responsibilities
- Overseeing the winemaking process from grape to bottle—pressing, fermentation, racking, bottling, labelling, and disgorging sparkling wine.
- Managing winery operations, equipment, stock control, and ensuring efficiency.
- Working closely with growers and managing harvest logistics.
- Supervising and training seasonal cellar staff.
- Ensuring compliance, record-keeping, and maintaining a high standard of quality.
- Contributing to other aspects of the business—since winemaking is seasonal and we’re still growing, we’ll need you to pitch in beyond the cellar. Depending on your skills, this might include leading tours, hosting tastings and events, or representing the brand.
What We’re Looking For
Essential:
- The right to work in the UK.
- Experience as an Assistant Winemaker or Winemaker (still & sparkling).
- A qualification in Viticulture & Oenology OR hands-on winemaking experience.
- A proactive, problem-solving mindset.
- Ability to handle physical work and seasonal demands.
- Forklift license (or willingness to get one).
- Strong communication and teamwork skills.
Desirable:
- Experience working in a contract winery.
- Familiarity with winery software.
- Additional certifications (WSET, lab work, etc.).
- Knowledge of sustainable winemaking practices.
