As our Assistant Winemaker and Winery Production, you’ll be a key member of the winery team, supporting both primary and secondary winemaking operations reporting to the Winemaker. You’ll work hands-on throughout the year, contributing to every stage of production.
Primary responsibilities:
· Winemaking during harvest: grape receival, pressing and fermentation.
· Carry out cellar operations including racking, blending, stabilising, filtering.
· Assist with bottling, labelling and packaging of still and sparkling wines.
· Assist with traditional method sparkling wine production including tirage, secondary fermentation, riddling, disgorging, and dosage trials.
· Oversee winery equipment maintenance and coordinate sparkling wine production logistics.
· Conduct wine analysis and lab work.
· Stock control, record keeping, and order dispatch.
· Maintain high standards of cleanliness and hygiene across the winery.
· Implement and refine production systems to support growth.
· Maintain rigorous quality control, hygiene, and traceability standards.
· Collaborate with vineyard and commercial teams to align production with sales strategy.
· Ensure compliance with UK food safety and regulatory requirements.
Supporting responsibilities:
· Provide some support the vineyard team during key stages of grape growing.
· Assist with hospitality, events and customer tastings at the estate.
· Support vintage planning, seasonal staff supervision and assist in seasonal demand in other areas of the business.
About You
We’re looking for someone enthusiastic, hands-on, and eager to grow their winemaking career in a dynamic, award-winning environment.
· Must have qualifications in Winemaking (Viticulture and/or Oenology)
· Passion for crafting world-class wines.
· Detail-oriented with strong organisational skills.
· Team player with a positive, can-do attitude.
· Physically capable of lifting up to 25 kg.
· Self-motivated; able to work independently and collaboratively.
· Willingness to learn and continuously improve.
· Full UK driving licence and access to own transport (essential).
Desirable Experience
· Previous experience in wine production and harvest (essential)
· Forklift experience and certification (preferred).
