· Assist in supervising all day to day cellar operations, including harvest, bulk wine, barrels, bottling preparation, sanitation, cellar organization, cleanliness.
· Responsible for all labelling, riddling and disgorging requirements and appropriate record keeping for traceability.
· Running and maintaining of winery equipment, including presses, pumps, labelling and disgorging machines.
· Assist the Winemaker with all winemaking tasks including racking, barrel filling and emptying, cold stabilisation and filtration and general tank hall cleanliness.
· Supervise grape receiving, crushing, pressing and wine production operations during harvest.
· Participate in wine tasting at all stages throughout the winemaking process and be responsible for conducting evaluation and recommendation of treatments.
· Responsible for supervising, training, and mentoring all cellar employees including during harvest and bottling, providing ongoing instruction and support as assigned.
· Work with the Winemaker on all blends to insure wine quality is maintained and bottling requirements are met on time.
· Assisting with harvest preparation including grape sampling and analysis in order to deduce grape ripeness and liaising with winemaker to decide harvest start dates.
· Contribute to the continuous improvement of the winemaking process and procedures.
· Carrying out basic laboratory analysis of wines.
· Safety training and management of compliance issues in the laboratory and cellar environment to provide a safe work place for seasonal and part time workers.
· Ordering of supplies, including corks, foils and wire hoods.
· Undertaking regular stock takes for Wiston Estate and contract clients.
· Available for assisting in vineyard at certain times of year when required.
· Assist in tastings and tours of the winery, when needed.
· Responsible for adhering to all health and safety regulations and operating procedures.
· Preparation of orders and assist in booking in of orders when required.
· Be available for weekend and evening work during peak periods such as bottling and harvest.
