The iconic Jack Russell pub has always been the focal point of the community within the Faccombe Estate. It is currently closed and undergoing major refurbishment including the exciting addition of a 9 bedroom shoot lodge, including a gun room, private bar and living area.

The new look Jack Russell will remain at the hub of the community and will offer a seasonally focused menu using the very best ingredients sourced from the surrounding Faccombe Estate and farmland alongside real ales, fine wines and cigars.

The Jack Russell will have 90 covers spread across the dining areas and public bar with an additional 100+ covers in the idyllic outside space with breath taking views.

The refurbishment includes considerable investment on the new state of the art kitchen with induction, combination oven, and a fantastic layout with the capacity to operate up to 200 covers at a time with further opportunities to cater for large functions. Game being key to the estate there will be shoot lunches, elevenses and full shoot party dinners right through the season.

Working closely with the Landlord and the owner, estate director and head keeper of the estate you will have a great deal of autonomy with menu writing, suppliers used, recruitment and staffing.

We are looking for a skilled and passionate Head Chef to lead the brigade.

Ideal candidates will be mad about food and have bags of drive and energy.

We are looking for a Head Chef who:

-Has a knowledge and passion for game and all produce of the estates farm and gardens

-Will be able to integrate and become immersed into the close knit local community

·Is reliable, conscientious and punctual

·Has experience in high volume kitchens ideally at 1 Rosette level or higher

·Is passionate about using fresh, seasonal and local produce

·Takes pride in what they do and genuinely cares

·Is able to motivate and train junior members of the team

·Is extremely organised, works well under pressure and leads by example

·Is able to communicate daily to the relevant departments

·Is able to adhere to company standards and procedures and can hit financial and management targets

·Has an excellent working knowledge of HACCP and COSHH

·Level 3 certification in food hygiene

This is a unique opportunity not to be missed. We are looking for an existing Head Chef but would consider a talented and experienced senior sous chef who it hungry to take on their own kitchen.
